Pumpkins, like other squash, are thought to have originated in North America. Evidence of this is pumpkin-related seeds dating between 7000 and 5500 BC which were found in Mexico. Often associated with Halloween, the first record of carving pumpkins for this autumn festival is in 1866.

The association of the pumpkin and Thanksgiving is partly due to the large harvest of this vegetable in North America, the variety of ways that pumpkin can be consumed and its notable nutrition and health benefits. The bright orange color of pumpkin is a real giveaway that pumpkin is loaded with an important antioxidant, beta-carotene which is converted to vitamin A in the body. Evidence supports that beta carotene performs many important functions in overall health including potential to reduce the risk of developing certain types of cancer and protection against heart disease and some degenerative aspects of aging.
