Broccoli Puree

Broccoli derives its name from the Italian word "brocco" meaning arm or branch!

From very earliest recorded history, broccoli was a much enjoyed vegetable particularly in Italy. Apicius, the beloved cookbook author of ancient Rome, prepared broccoli by first boiling it and then bruising it "with a mixture of cumin and coriander seeds, chopped onion plus a few drops of oil and sun-made wine."

Broccoli is a superhero of the vegetable kingdom with its rich vitamin A content (the dark green color is an indicator of its high carotene content), and B vitamins, magnesium, potassium and zinc.

In 1 cup cooked broccoli there is as much calcium as 4 oz of milk and as much vitamin C as a whole orange!
